1 kg (2lb 4oz) blackcurrants
800 ml (1 ½ pints) water
1 kg (2lb 4 oz) granulated sugar
- Put blackcurrants into a very large pan.
- Bring to the boil and then simmer until blackcurrants are soft – about 5 minutes.
- Stir in the sugar until dissolved.
- Boil rapidly until set – about 15 minutes.
- Test for setting every 1 minute.
- Leave to cool for 15 minutes.
- Pour into hot sterilised jars.
- Seal and label.
