Blackcurrant Jam

Ingredients:

1 kg  (2lb 4oz) blackcurrants

800 ml  (1 ½ pints) water

1 kg (2lb 4 oz) granulated sugar

Method:

  • Put blackcurrants into a very large pan.
  • Bring to the boil and then simmer until blackcurrants are soft – about 5 minutes.
  • Stir in the sugar until dissolved.
  • Boil rapidly until set – about 15 minutes.
  • Test for setting every 1 minute.
  • Leave to cool for 15 minutes.
  • Pour into hot sterilised jars.
  • Seal and label.
