Coronation Chicken

Ingredients:

2 heaped tabsp mayonnaise

2 heaped tabsp Apricot Jam

2 tsp curry paste – korma

Left over cooked chicken – (approx 1/2 medium chicken)

Method:

  • Mix mayonnaise, apricot jam and curry paste in a large bowl.
  • Take cooked chicken off the bone.
  • Add chicken to mixture.
  • Leave to marinate in fridge for a few hours before eating.
  • Serve with Jacket Potatoes and a mixed Salad.
  • (The amounts in recipe would vary according to taste and amount of chicken)
