
These meringues are so easy and versatile for a quick dessert or summer afternoon tea. Yum
1. Mix one egg white with 300g icing sugar with a wooden spoon to a firm dough.
2. Roll into small walnut size balls.
3. Place 3 on a piece of kitchen roll on a plate and cook in the microwave for 1.5 minutes. Peel meringues off and repeat until mixture is all used.
