Pickled Runner Beans

Ingredients:

1  ½ lb  Runner Beans (when dry trimmed and sliced)

1  ½ lb granulated sugar

1 pint malt vinegar

1 tsp ground spice

s & p

Method:

  • Boil beans for 10 mins
  • Mix together all the other ingredients and place in a saucepan with the strained beans.
  • Bring back to the boil for 5 mins.
  • Place in clean, warm jars.
  • Store for 2 weeks to develop flavour.
